Goat Cheese & Walnut Stuffed Celery Bites for Entertaining

Last month, while developing a couple of recipes for a client, I ended up creating two celery appetizers instead of just one. I meant to share both at a recent food event, but only one made the final cut. Since it’s Thanksgiving week, I’m happy to share this simple and elegant appetizer that comes together quickly and looks great on a holiday platter.

I love the contrast of creamy goat cheese, crunchy walnuts, crisp celery and a touch of sweet honey. It’s an easy, crowd-pleasing starter — enjoy!

Goat Cheese and Walnut Stuffed Celery

A very quick and easy appetizer for holidays or casual gatherings. If preparing the night before, complete every step except adding the honey; drizzle the honey just before serving to keep the celery crisp.

Ingredients

  • 4 celery stalks, cut into thirds
  • 5.3 oz. package of spreadable goat cheese, (use a spreadable brand)
  • 1/4 cup chopped walnuts
  • raw honey, to drizzle

Instructions

  • In a medium bowl, combine the spreadable goat cheese and chopped walnuts until evenly mixed. Using a butter knife or small spoon, fill each celery piece with the goat cheese mixture. Arrange the stuffed celery on a platter and drizzle lightly with raw honey just before serving to keep the celery crisp.

Notes

Cook’s Notes:

Be sure to use spreadable goat cheese; a firmer variety will make stuffing the celery difficult. If preparing in advance, assemble the celery boats and cover them, then add honey right before serving.
