This Bicol Express has a well-rounded mix of flavors: fiery chilies, creamy coconut milk, and savory shrimp paste. The chilies give a satisfying heat while the coconut milk softens it. Sauteed shrimp paste (bagoong) adds saltiness and depth — if you don’t have it, fish sauce or soy sauce can work as substitutes. This dish is quick to prepare and makes a flavorful weeknight meal.
What is Bicol Express?
Bicol Express is a spicy Filipino stew made with bite-sized pieces of pork cooked in coconut milk with chilies, shrimp paste, onions, tomatoes and garlic. It originated in the Bicol region of the Philippines, an area known for its love of spicy food.
Ingredients
Key ingredients for Bicol Express:
- Pork — pork belly, pork shoulder or pork roast, cut into bite-sized pieces. Choose based on how fatty you prefer the dish.
- Garlic — minced.
- Onion — diced.
- Tomato — diced.
- Coconut milk — the creaminess helps balance the heat.
- Sauteed shrimp paste (bagoong) — salty and flavorful. Substitute with fish sauce or soy sauce if needed.
- Thai chilies — minced. Adjust quantity or remove seeds to control spiciness.
How to make Bicol Express
Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the minced garlic and sauté for about 30 seconds. Add the diced onion and tomato and cook until the onion is translucent. Add the remaining oil, then the pork, and sauté until the meat is lightly browned. Pour in the coconut milk, bring to a boil, then lower the heat and simmer for 15 minutes. Stir in the minced Thai chilies and simmer another 5 minutes. Remove from heat and mix in the sauteed shrimp paste (or fish sauce/soy sauce to taste). Serve hot over steamed rice.
