What Cheese To Use For Queso
The best cheeses for queso have the right fat and moisture balance so they melt smoothly without becoming greasy or grainy. Good options include:

White Cheese Hamburger Queso Dip Recipe

Equipment
- Large nonstick skillet or frying pan
Ingredients
- 1 lb ground beef
- 1 tablespoon corn starch
- 1 tablespoon garlic powder
- 1 tablespoon fajita seasoning (or taco seasoning)
- 2 tbsp olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 1 cup green chile sauce
- 10 oz Cacique enchilado or Oaxaca cheese (or other mild white melting cheese), shredded or cubed
- ½ cup shredded mozzarella, fiesta blend, or cheddar
- ½ cup crema
- Cilantro, to garnish
- 1 jalapeno, sliced (optional)
- ¼ cup cotija, to garnish
Instructions
- In a large nonstick skillet, brown and crumble the ground beef until cooked through, about 5 minutes.
- When the beef is nearly browned, season with garlic powder and the fajita or taco seasoning (if using a packaged mix, use half the packet).
- Remove the seasoned beef from the pan and set aside.
- Add the olive oil to the same pan and scrape up any browned bits as it heats until the oil is shimmering.
- Add the diced onion and bell pepper and cook until softened and lightly browned, about 4 minutes.
- Toss the shredded cheese with the cornstarch to coat evenly.
- Stir the green chile sauce into the vegetables, then add the coated shredded cheese and stir vigorously as the cheese melts into a smooth sauce.
- Stir in the crema and continue stirring until fully combined and smooth.
- Remove from heat and let the dip cool slightly to thicken, about 4 minutes.
- Top with sliced jalapenos, fresh cilantro, and cotija crumbles before serving.
Notes
To make a lower-carb version, reduce the onion and bell pepper by half.
