Are you ready for Thanksgiving yet? I usually plan early—often in October—because with six kids, staying ahead saves a lot of stress. This year the weeks slipped by and I’m still finalizing the menu, but I do have at least one guaranteed favorite: these maple roasted sweet potatoes.

They’re straightforward to prepare and use a handful of wholesome ingredients. If you prefer to skip nuts, simply leave out the pecans—these are just as delicious without them.

Maple Roasted Sweet Potatoes

Lightly sweetened with maple syrup, spiced with cinnamon, and optionally topped with pecans.

Ingredients

  • 4 sweet potatoes, scrubbed and peeled
  • 2 tablespoons olive oil
  • 2 teaspoons cinnamon
  • Sprinkle of salt and pepper
  • 1/4 cup maple syrup
  • 1/3 cup coarsely chopped pecans (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut sweet potatoes into roughly 1″ cubes. Place them on a baking sheet and toss with olive oil, cinnamon, and a sprinkle of salt and pepper.
  3. Bake for 20 minutes.
  4. Remove from the oven and pour maple syrup over the potatoes. Gently toss to coat, then return to the oven and bake 10 more minutes.
  5. Remove from the oven, sprinkle with pecans if using, and serve immediately.
