If you’ve used any of my free meal plans before, you’ll know how helpful a loose guide can be when deciding what to cook during the week.

This time I’m sharing the Sunday Setup Series — Week 2. It’s what I prepared in a few hours on a Sunday afternoon. Do one recipe or all of them, whatever suits your family.

What we can prep

I’m not suggesting you prep every meal — every little bit helps. Do as much or as little as suits you.

This week’s prep focuses on:

  • ⭐️ Breakfasts to save time on busy mornings
  • ⭐️ Healthy snacks for packed lunches or after school
  • ⭐️ A sweet treat suitable for lunch boxes or snacks
  • ⭐️ Soup for lunches or light dinners that freezes well
  • ⭐️ A veg tray with everything chopped to save time
  • ⭐️ A fruit salad for breakfasts, snacks or desserts
  • ⭐️ One base meal that can become three different dinners

Sunday SETUP tips

➡️ Double the soup you make and freeze the extra for another week.

➡️ Use sturdy meal prep containers and a sectioned platter to store chopped vegetables and keep the fridge organised.

➡️ Most prepped food will keep in the fridge for 3–4 days; otherwise freeze portions for later.

➡️ Notes on storing, freezing, defrosting and reheating are included with each recipe.

➡️ Everything on the printable shopping list is what you need for the meals below.

Base Meal x1.5

⭐️ Make a large batch of Pulled Pork to stretch across multiple meals. Increasing the original recipe to about 12 portions works well for:

  • Meal 1: Serve in buns with oven chips and coleslaw.
  • Meal 2: Stir through mac and cheese with a green salad.
  • Meal 3: Use as a taco filling with shredded lettuce, feta, avocado and pickled onions.

⭐️ Storing: Keeps in the fridge for 3 days or freeze into portions for later use.

Fruit salad

⭐️ Wash and chop your favourite fruits into a big bowl for easy breakfasts, snacks or desserts with yoghurt. Simple, healthy and ready to grab.
