  • Create a roux (flour cooked in butter) or use a cornstarch slurry to stabilize the sauce; starch helps prevent fat from separating.
  • Add a small emulsifier like mustard powder to help bind the ingredients together.

Shred or cut the cheese

Shredding or cubing cheese increases surface area so it melts faster and more evenly. Avoid large chunks that take longer to melt and risk scorching.

What Cheese To Use For Queso

The best cheeses for queso have the right fat and moisture balance so they melt smoothly without becoming greasy or grainy. Good options include:

  • Quesadilla cheese

  • Cheddar

Cotija is a great finishing cheese for texture and tang, but it doesn’t melt well, so use it as a garnish rather than the base of the dip.

White Cheese Hamburger Queso Dip Recipe

Equipment

  • Large nonstick skillet or frying pan

Ingredients

  • 1 lb ground beef
  • 1 tablespoon corn starch
  • 1 tablespoon garlic powder
  • 1 tablespoon fajita seasoning (or taco seasoning)
  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 cup green chile sauce
  • 10 oz Cacique enchilado or Oaxaca cheese (or other mild white melting cheese), shredded or cubed
  • ½ cup shredded mozzarella, fiesta blend, or cheddar
  • ½ cup crema
  • Cilantro, to garnish
  • 1 jalapeno, sliced (optional)
  • ¼ cup cotija, to garnish

Instructions

  1. In a large nonstick skillet, brown and crumble the ground beef until cooked through, about 5 minutes.
  2. When the beef is nearly browned, season with garlic powder and the fajita or taco seasoning (if using a packaged mix, use half the packet).
  3. Remove the seasoned beef from the pan and set aside.
  4. Add the olive oil to the same pan and scrape up any browned bits as it heats until the oil is shimmering.
  5. Add the diced onion and bell pepper and cook until softened and lightly browned, about 4 minutes.
  6. Toss the shredded cheese with the cornstarch to coat evenly.
  7. Stir the green chile sauce into the vegetables, then add the coated shredded cheese and stir vigorously as the cheese melts into a smooth sauce.
  8. Stir in the crema and continue stirring until fully combined and smooth.
  9. Remove from heat and let the dip cool slightly to thicken, about 4 minutes.
  10. Top with sliced jalapenos, fresh cilantro, and cotija crumbles before serving.

Notes

To make a lower-carb version, reduce the onion and bell pepper by half.
