I’m partnered with Campbell’s to share a cozy, simple, and special breakfast — perfect for Mother’s Day.
This Cheddar Make-Ahead Breakfast Casserole delivers everything you want in a morning dish: rich, creamy, cheesy, and easy. It layers savory sausage, buttery sweet rolls, fluffy eggs, and a secret shortcut that ties it all together — Campbell’s Condensed Cheddar Cheese Soup.
The real advantage is how stress-free it is: assemble the casserole ahead of time, refrigerate, then bake in the morning so you can relax and enjoy the day. No rushing, no fuss — just a warm, comforting breakfast that feels like a hug on a plate.
Making this with my son Anthony Jo made it extra meaningful. Recipes like this are what Mother’s Day is all about: simple, comforting, and made together.

Pin Recipe
Ingredients
- 1 lb breakfast sausage
- 6 eggs
- 2 ½ cups milk
- ½ tsp dry mustard powder
- Pinch cayenne
- 1 can Campbell’s Condensed Cheddar Cheese Soup
- Sweet rolls cubed and buttered
- 2 cups shredded cheddar cheese
- 1 cup Colby cheese
- Chopped green onions
Instructions
-
Preheat oven to 350°F.
-
Brown the breakfast sausage in a skillet, drain if needed, and set aside.
-
Butter and cube the sweet rolls so they’re ready to layer.
-
In a large bowl, whisk together the eggs, milk, dry mustard, cayenne, and the can of Campbell’s cheddar cheese soup until smooth.
-
In a 9×13 baking dish, layer the cubed sweet rolls, cooked sausage, and then pour the egg mixture evenly over the top.
-
Gently shake or tap the dish so the egg mixture settles and soaks into the bread cubes.
-
Top with shredded cheddar, Colby cheese, and chopped green onions.
-
Bake uncovered for about 1 hour, until the center is set and the top is golden. Let rest a few minutes before serving.
👝 How to Store Leftovers
Keep leftovers in an airtight container in the refrigerator for 3–5 days. Reheat portions in the oven or microwave until warmed through.
