Wine popsicles are a simple, elegant treat. Danae from Recipe Runner shares a quick method for turning fruit and wine into icy, adult-friendly popsicles.

The method is straightforward: blend wine with a fruit puree, pour into molds, freeze, then add chocolate if you like. Match the wine to the fruit you use — red wine works beautifully with berries, while white wine pairs well with citrus, pineapple, or lighter fruits. This recipe uses red wine with strawberries and a chocolate dip for an indulgent touch.

Ingredients You’ll Need

  • Red wine – Pick your favorite red; Pinot Noir or Merlot are good choices. For a non-alcoholic version, use a dark juice like cranberry or grape (the flavor will differ).
  • Strawberries – Fresh or frozen both work.
  • Balsamic vinegar – A small amount brightens the strawberry flavor; it’s optional.
  • Simple syrup – Make it by heating 1/2 cup sugar and 1/2 cup water until the sugar dissolves.
  • Chocolate – Semi-sweet or dark chocolate is ideal for dipping; use bars or chips.
  • Coconut oil – Adds shine and a smooth texture to the melted chocolate.

Steps to make the popsicles

Step 1: Add the strawberries, red wine, balsamic vinegar (if using), and simple syrup to a blender or food processor.

Step 2: Puree until the mixture is smooth and well combined.

Step 3: Pour the puree into popsicle molds and insert sticks.

Step 4: Freeze the molds until the popsicles are solid, about 4–8 hours or overnight for best results.

Step 5: When the popsicles are fully frozen, melt the chocolate in a double boiler or microwave. If using a microwave, heat in 20-second intervals, stirring between each, until just melted.

Step 6: Stir in the melted coconut oil to loosen the chocolate and give it a glossy finish.

Step 7: Remove the popsicles from their molds and dip about half of each popsicle into the melted chocolate, or drizzle chocolate over them.

Step 8: Place the dipped popsicles on a baking sheet lined with parchment paper. Work quickly to prevent melting, then return them immediately to the freezer to set.

Expert Tips

  • Use a sturdy popsicle mold and good-quality sticks for easy handling.
  • To release popsicles, run the mold under warm water for 30 seconds — they should slip out easily.
  • Choose ripe, in-season (or good-quality frozen) fruit for the best flavor.
  • Try layering different purees for striped or swirled popsicles — let each layer partially set before adding the next.
  • Storage: Keep popsicles in the mold or store them in a single layer on parchment in the freezer inside an airtight container or freezer bag. If stacking, separate layers with parchment to prevent sticking.

Ingredients

  • 16 ounces strawberries, washed and hulled
  • 1/2 cup simple syrup, (1/2 cup sugar + 1/2 cup water heated until sugar dissolves)
  • 1 cup red wine, (Pinot Noir suggested)
  • 2 tablespoons balsamic vinegar
  • 6 ounces dark chocolate, melted
  • 1/2 teaspoon coconut oil, melted

Instructions

  • Combine strawberries, simple syrup, red wine, and balsamic vinegar (if using) in a blender or food processor and puree until smooth.
  • Pour the mixture into popsicle molds and insert sticks.
  • Freeze for at least 4–6 hours or overnight.
  • Melt the dark chocolate gently (double boiler or microwave in 20-second intervals), then stir in the coconut oil.
  • Line a baking sheet with parchment paper.
  • Remove popsicles from the molds, dip or drizzle with chocolate, place on the prepared sheet, and return to the freezer until the chocolate is set.
  • Store finished popsicles in a single layer in a freezer bag or airtight container.

Notes

Ingredient notes:

  • Red wine: Pinot Noir is used here, but Merlot or other reds work well.
  • Strawberries: Use fresh or frozen depending on availability.
  • Balsamic vinegar: Optional; it enhances berry flavor.
  • Chocolate: Bars or chips both work for melting.

Other tips:

  • To release popsicles easily, run the mold under warm water for about 30 seconds.
  • Storage: Keep popsicles in the mold or store individually in a freezer bag or airtight container. If storing in a container, layer them between parchment and refreeze until solid.
