This week’s menu highlights tasty leftover turkey recipes, a comforting Slow Cooker Enchilada Soup, flavorful Pesto Pork Chops, and several other easy dinner ideas!
Hi! How was your Thanksgiving? Ours was delicious. We ate around 2:00 and I was so stuffed I didn’t eat again the rest of the day. It’s rare for me to skip dinner, so you can bet I piled my plate high at lunch.
I’m taking a break from the frustrating task of putting up the Christmas tree to share seven dinner recipes for the week. I wish I could paint a charming picture of my family happily decorating the tree while singing carols, but right now I’m the one wrestling with stubborn lights on a prelit tree. A little time away and I’m sure I’ll come back, smile, and get everything working — then the carols will follow. Until then, here are some reliable easy dinner ideas to get you through the week.
- Turkey Spinach Alfredo Pizza – This is one of my favorite ways to use leftover turkey. It’s creamy, savory, and quick to assemble. We’ll be making it again this weekend for sure.
- 30-Minute Pot Pie – I originally used chicken, but this recipe is perfect for leftover turkey as well. It’s fast, comforting, and I filmed a short video to show how simple it is to make.
- Ranch Turkey Club Salad – A favorite for Thanksgiving leftovers, this salad brings all the club-sandwich flavors into a bowl. It’s mostly assembly with just a bit of bacon to cook.
- Beef Enchilada Slow Cooker Soup – I almost made this whole week turkey-focused, but variety is nice. This slow cooker soup is easy, hearty, and brings enchilada flavors to a comforting bowl of soup.
- Pesto Stuffed Oven Baked Pork Chops – These pork chops are simple to prepare and full of bright pesto flavor. Pair them with steamed broccoli or green beans and Cheddar Chive Rice for a complete meal.
- Fish and Chips Sandwiches – A playful, fast meal the whole family enjoys. Serve with a simple fruit salad or a crisp side for balance.
- Creamy Turkey Spaghetti – Back to turkey, but this time using ground turkey for a different texture and flavor. You can easily substitute ground chicken or beef if you prefer.
