I’ve spent the morning imagining something indulgent: a truly luxurious breakfast to enjoy in bed. When Juliette’s Interiors invited me to create a breakfast to match one of their beautiful beds, I couldn’t resist. The brief was simple — make something decadent and comforting, the kind of breakfast that makes staying in bed feel like a treat.
A luxurious breakfast to eat in bed
For those who don’t know me, I love my bed. I treasure sleep and mornings, and pairing that peaceful start with a special meal feels like the perfect indulgence. Browsing Juliette’s Interiors for inspiration sent my imagination spinning. I picked an Italian Button Upholstered four-poster bed — it reminded me of the night of our wedding and felt perfectly luxurious for this project.

Four-poster beds hold a particular charm for me: they conjure images from books and the idea of hiding away in comfort. While such a grand bed would look out of place in my small bedroom, this exercise is about dreaming — and dreaming big.
Creating gluten-free Belgian waffles
At the moment I’m following a low-carb, low-sugar plan, so waffles aren’t part of my daily routine. Still, I love how waffles say “special occasion.” For this luxury breakfast I made gluten-free Belgian waffles that are light, crisp and perfect with crispy bacon and a drizzle of maple syrup. They take a little more time than a basic waffle, but the extra effort is well worth it.

I used my wholegrain gluten-free flour blend for this recipe. If you’re new to gluten-free baking, understanding flour blends matters — it makes the difference between a successful bake and one that falls flat. These waffles are crisp on the outside, tender inside, and pair beautifully with salty, crunchy bacon and sweet maple syrup.

Equipment notes
A waffle iron that makes two waffles at once saves time and arguments at the breakfast table. You’ll also need a bowl for mixing and an electric whisk or mixer to beat the egg whites to stiff peaks. A ladle helps transfer batter to the waffle iron. Using a reliable mixer for the egg whites gives the best lift and texture in these Belgian-style waffles.

Gluten Free Belgian Waffles With Crispy Bacon & Maple Syrup
Gluten-free, nut-free, soya-free, low sugar (can be dairy-free)
Ingredients
- 2 medium eggs, separated (preferably organic or free-range)
- 220 ml milk (dairy or dairy-free)
- 60 g butter, melted (or dairy-free margarine)
- 1 tsp vanilla extract
- 170 g gluten-free self-raising flour (or 170 g plain gluten-free flour plus 1 3/4 tsp baking powder)
- 20 g sugar
- To serve: 12 rashers bacon, cooked until crispy (streaky gives extra crispiness)
- Maple syrup
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- Separate the egg yolks and whites into two bowls.
- Whisk the egg yolks with the milk, melted butter and vanilla until combined.
- Slowly add the flour to create a smooth batter, then stir in the sugar.
- Beat the egg whites with an electric whisk until you have stiff peaks.
- Gently fold the egg whites into the batter to keep as much air as possible.
- Ladle the batter into the waffle iron and cook until golden and crisp.
- While the waffles cook, fry the bacon until crisp. Cut into pieces with scissors, scatter over the waffles and drizzle with maple syrup to serve.
