I love celebrating Halloween with my kids. Dressing up, creating cute and spooky treats, and decorating always makes this season special. These four spooky Halloween popsicles are simple to make, refreshingly delicious, and perfect for a festive party or an afternoon activity with the kids.

I used a quick popsicle maker and a few simple tools to create neat layers and clean lines, then decorated each pop with a little magic shell and candy eyes. If you don’t have specialty tools, a small paper cup with a pinched end, a pipette, or a resealable plastic bag with a tiny corner cut off works well for pouring and piping. The method is forgiving and great for letting kids help with mixing, layering, and decorating.

Coconut Ghost Popsicles

The little coconut ghost is one of my favorites. Its texture from shredded coconut makes it taste rich and slightly tropical, while magic shell details give it personality. For candy corn-style popsicles, build the layers by freezing each section before adding the next so you get distinct stripes of white, orange, and yellow. The green smoothie monster hides a bit of spinach for a boost of greens, and the kids love the crunchy magic shell and candy eyes so much they don’t even notice the vegetables.

These Halloween popsicles are delicious and a lot of fun to make. Let the kids help decorate them for extra excitement.

Ingredients

For Ghosts:

  • 2 cups coconut milk
  • 1 Tbsp cream of coconut (Coco Rèal or similar)
  • 1 Tbsp shredded coconut (optional)

For Candy Corn Pops:

  • Extra coconut mixture from the ghost batch
  • 1 cup orange juice
  • 1 cup crushed pineapple or pineapple juice

For Green Smoothie Monster:

  • 1/2 banana
  • 1 cup fresh spinach
  • 1 cup crushed pineapple or pineapple juice
  • Chocolate magic shell for decorating
  • Candy eyes

For Pumpkin Pops:

  • 1/4 cup pumpkin puree
  • 1 cup coconut milk

Instructions

  1. Ghosts: Mix coconut milk with cream of coconut and shredded coconut. Pour into molds for ghost pops. Freeze until firm. For facial features, use melted magic shell in a small plastic bag with a tiny corner cut off to pipe eyes and mouth.
  2. Candy Corn Pops: Start with the coconut layer and freeze until solid. Add an orange juice layer, freeze, then finish with a pineapple layer. Freeze each layer fully before adding the next to keep the stripes distinct.
  3. Green Smoothie Monster: Blend banana, spinach, and crushed pineapple (or pineapple juice) until smooth. Pour into molds and freeze. Once frozen, dip tops in chocolate magic shell for hair, pipe a mouth with the magic shell, and attach candy eyes using a small dab of melted shell.
  4. Pumpkin Pops: Combine pumpkin puree with coconut milk, stir until smooth, pour into molds, and freeze. Decorate with magic shell once frozen if desired.
  5. To remove popsicles from molds, briefly run the outside of the mold under warm water to loosen them—don’t submerge the tops so the sticks stay dry.
  6. Yield varies with mold size. These recipes make several pops depending on your mold; enjoy and get the kids involved with decorating.
