Beer-Simmered Hot Dogs with Onion-Bier Sauce

Hot dogs simmered in beer in buns topped with sauerkraut and served with seasoned French fries.

Slow-simmering hot dogs in beer yields a tender, evenly flavored alternative to grilling or frying. The gentle poach in lager keeps the sausages juicy and infuses them with subtle malt notes that pair especially well with a beer-enhanced sauerkraut.

A classic accompaniment for hot dogs is french fries; try spicy garlic oven fries for a bold contrast to the mild, beer-simmered dogs.

Ingredients

  • 8 natural casing hot dogs, uncured if possible
  • 1 lb sauerkraut
  • 1 tablespoon sugar
  • 12 ounces lager beer, divided (see notes)
  • 2 thick slices of sweet onion, separated into rings
  • 3 garlic cloves, peeled and smashed
  • 8 hot dog buns, lightly toasted and buttered

Instructions

  • Place the sauerkraut in a colander, rinse lightly with cold water and drain thoroughly. Transfer to a large skillet, sprinkle with the sugar and add 1/2 cup of the beer.
  • Bring to a gentle simmer over medium heat and cook, stirring frequently, until the beer has mostly cooked off, about 10 to 15 minutes. Remove from the heat and set aside.
  • While the sauerkraut cooks, place the onion, garlic and hot dogs in a sauté pan and pour in the remaining beer. Bring to a slow simmer over medium-low to medium heat. Cover and cook for 30 minutes, turning the hot dogs occasionally so they cook evenly and absorb the beer flavor.
  • When done, drain the hot dogs on paper towels, place them in the toasted buns and top with the prepared sauerkraut.

Notes

We’ve tested this method with various beers and a lager provides flavor without bitterness. Choose a lager you enjoy for the best results.
