I’ve got an easy sugar cookie recipe that doesn’t require refrigeration — and they’re seriously delicious!

These aren’t the roll-and-cut sugar cookies. Instead, the dough comes together quickly and you simply drop spoonfuls onto a baking sheet for a fuss-free treat.

If you’ve avoided traditional sugar cookies because of the time and work involved, this recipe is for you. It’s fast, tidy, and yields soft, buttery cookies that are perfect for frosting.

Top them with a fluffy buttercream and some colorful sprinkles for a happy, classic treat.

Ingredients
- 1 ½ c powdered sugar
- 1 c unsalted butter
- 1 egg
- 1 tsp vanilla
- 1 tsp almond extract
- 1 tsp baking soda
- 1 tsp cream of tartar
- 2 ½ c flour
Buttercream Frosting
- 1 c unsalted butter softened
- 3-4 c powdered sugar SIFTED
- ¼ tsp salt
- 1 tbsp vanilla extract
- 4 tbsp heavy cream
- red food coloring
Instructions

Mix the dough ingredients together in a mixer until combined.

Drop rounded spoonfuls of dough onto ungreased baking sheets, spacing them a couple inches apart.

Bake at 350°F for 10–12 minutes, or until the edges are just starting to brown.

Transfer to a rack and cool completely before frosting.
Buttercream Frosting

Beat softened butter with the paddle attachment on medium speed for a few minutes until smooth.

Add 3 cups sifted powdered sugar and mix on low until incorporated.

Increase speed to medium, add vanilla, salt, and 2 tablespoons heavy cream, and beat about 3 minutes until light and fluffy.

If the frosting is too stiff, add remaining heavy cream 1 tablespoon at a time. If it’s too thin, add the remaining powdered sugar until it reaches the desired consistency.

Tint with a few drops of food coloring if desired, frost the cooled cookies, and finish with sprinkles.
