Caramel Apple Cider Cocktail Recipe to Celebrate a 3rd Anniversary

I planned to publish this Caramel Apple Cider Cocktail post on Monday to celebrate the third anniversary of The Merchant Baker. It was meant to be a bonus entry alongside my usual weekly post.

I love plans. I make lists, charts and timelines — my family teases me about those charts — because plans help organize life, set expectations and move us toward goals. But sometimes the universe ignores plans and delivers unexpected setbacks. Those surprises can knock the wind out of you and leave you disoriented. Even writing a simple blog post can feel impossible when life is heavy.

Commitment matters to me. I delayed starting this blog for years because I worried I couldn’t follow through. I don’t like beginning something and leaving it unfinished. When I volunteered at my child’s school early on and my shift ended without a replacement, I asked whether I should stay. The leader told me, “No one’s going to fire you for not doing your job, Ramona. Just leave.” But I take responsibilities seriously. Whether I’m running a business or supervising children at an event, if I’m assigned a role, I do it well.

I began this blog as a creative outlet and a way to learn something new. It was a place to build while I figured out what else I wanted to pursue. That decision has turned into a meaningful, sometimes challenging, and often rewarding journey. Though “journey” and “being authentic” can sound overused, in this case the word fits: blogging has been an evolving process of learning and growth.

I’ve learned firsthand about social media marketing, SEO, advertising and other skills that used to be handled by an entire marketing team in my corporate life. The work is more time-consuming and technical than it appears from the outside, but that challenge has also been part of the fun. I set high standards for myself and hold to them; even if no one would “fire” me for skipping a post, I keep my commitments because I expect that of myself.

Along the way I’ve connected with readers, fellow bloggers and supportive people in the blogging community. A kind comment on a difficult day or a message from a virtual friend who shares similar struggles makes this work worthwhile. Those connections are one of the biggest reasons I celebrate three years of blogging.

For the third blogiversary I considered a cake, like the second year, or a remake as I did for the first. Instead I decided on a drink: a Caramel Apple Cider Cocktail. It felt appropriate since I spent the month focused on apple recipes, and a cocktail seemed like a festive way to mark the milestone — especially on a hot and humid September day when a cold drink was preferable to a steaming mug.

I aimed for a simple cocktail, though it took practice and many small adjustments to find the right balance. I started with apple cider as the base and boosted both apple flavor and sweetness with a spoonful of apple cider caramel sauce; any caramel sauce works, but the apple cider variety adds extra apple depth. Rum makes a nice pairing here, though vodka would work too. A small amount of fresh lime juice brings balance — don’t overdo it — and a splash of cold ginger beer adds effervescence.

The result was a bright, caramel-kissed apple cocktail I enjoyed for the celebration. It felt good to meet the goal: to mark the anniversary, keep the commitment and share something seasonal and fun. Small achievements add up — and sometimes they lead to a thousand words written in the span of an afternoon.

(And just like that, a thousand words were written.)

Caramel Apple Fall Cocktail

Yield:
2 (4 ounce) cocktails

Ingredients

For the cocktail:

  • 1/4 cup (2 ounces) apple cider
  • 1 Tablespoon apple cider caramel sauce or your favorite caramel sauce
  • 1/4 cup (2 ounces) dark rum (or substitute vodka)
  • 1 teaspoon freshly squeezed lime juice
  • 1/2 cup ginger beer

For the garnish:

  • Chopped apple
  • Apple slices dipped in caramel sauce

Instructions

  1. Heat the apple cider with the caramel sauce just until the caramel melts (about 10–30 seconds in the microwave). Stir until combined and pour into an ice-filled cocktail shaker.
  2. Add the rum and lime juice. Shake until well chilled.
  3. Pour into two glasses filled with ice. Add chopped apple if desired.
  4. Top each glass with about 1/4 cup ginger beer and garnish with a caramel-dipped apple slice.

Notes

*This recipe makes two 4-ounce drinks or one large 8-ounce drink. Adjust the rum to taste if you prefer a stronger cocktail.

*Vodka can be substituted for rum. Consider apple- or caramel-flavored spirits for extra depth.

*A light dash of cinnamon before serving adds warmth, but skipping it preserves a cleaner caramel-apple profile.

*Freshly squeezed lime juice is important for proper balance; avoid bottled juice.

*Serve over a large ice cube to limit dilution when possible.
