In my effort to create more single-serve recipes, I recently tried using a small, inexpensive ceramic waffle iron to make gluten-free quesadillas — and they turned out wonderfully. The exterior develops a pleasant crispness you can control by shortening or lengthening the cooking time, while the interior becomes filled with gooey melted cheese and chicken or any other fillings you prefer. Serve with a non-fat, sweet-and-spicy dipping sauce for a bright, tangy kick.

Waffle Iron Gluten Free Quesadillas & Spicy Dipping Sauce

Yield: Serves 1
Delicious gluten free quesadillas made in a waffle iron. Serve with a non-fat sweet and spicy dip if you like.
Ingredients:
- 1 (5.3-oz.) container non-fat gluten-free plain Greek yogurt (such as Chobani)
- 1 tablespoon honey
- 1 teaspoon to 1 tablespoon gluten-free chipotle sauce (adjust to taste)
- 2 gluten-free corn tortillas (larger size works well)
- 1/2 cup loosely packed shredded Monterey Jack–Cheddar cheese blend
- 1/4 cup shredded cooked chicken breast (optional)
- 1 teaspoon diced green chiles (optional)
- Whisk together the yogurt, honey, and chipotle sauce until smooth. Chill until ready to serve.

Instructions:
- Preheat the waffle iron following the manufacturer’s directions. I used a medium-low setting.
- Place one tortilla flat on the preheated waffle iron.
- Top with the shredded cheese, chicken, and green chiles or any other fillings you like.
- Place the second tortilla over the filling. Close the lid and press down gently for about 7 seconds, then cook until the cheese is melted, about 2–3 minutes depending on your iron. If cheese spills onto the plates, carefully remove the excess with a paper towel once it cools slightly.
