Harvest Indian Corn Cookies
These cookies start with a familiar peanut butter sandwich cookie (like Nutter Butters). You can use a store brand with the same shape if preferred. For the colored coating we recommend Wilton candy melts for consistent melting and smooth coverage. If you’re comfortable working with food coloring and almond bark, you can adapt the coatings yourself.

Ingredients for Indian Corn Harvest Cookies
Nutter Butters or similar sandwich cookies
Yellow candy melts and green candy melts (Wilton recommended)
Miniature baking M&M’s (brown, yellow, orange)
Green lollipop sticks
Extra supplies:
Parchment paper
Decorating bag (or a small piping bag)

Directions for Harvest Indian Corn Cookies
- In two separate microwave-safe bowls, melt the candy melts: about 2 cups yellow in one bowl and 1 cup green in the other. Heat at 50% power in 30-second increments, stirring between each until fully melted and smooth.
- Carefully open a sandwich cookie, add a small dollop of melted yellow coating to the filling, and press a green lollipop stick into the filling so it extends about 1/2 inch from the top. Close the cookie gently, sandwiching the stick in place.
- Place the cookies on a parchment-lined baking sheet and freeze 5 minutes so the stick and filling set.
- Hold the cookie by the stick and dip the front side into the melted yellow coating. Let any excess drip off, then set the cookie back on the parchment.
- Press miniature M&M’s into the yellow coating in three vertical columns to mimic corn kernels. Alternate the brown, yellow, and orange colors as you go. Return the cookies to the freezer for about 15 minutes to harden.
- Meanwhile, remelt about 1 cup of green candy melts if needed, pour into a decorating bag, and snip a very small tip from the end.
- Pipe leaf shapes onto parchment to form corn husks. Freeze the piped leaves for 5 minutes until firm.
- Carefully peel the hardened husk pieces from the parchment. Add a tiny dab of melted candy to the base of each husk and press the husk onto the back of the cookie to complete the look. Allow to fully set before serving.
