Ingredient notes

  • Pizzelle cookies: Chocolate Pizzelles give a darker witch hat brim, but plain Pizzelles work too — the underside of the hat will be lighter in color.
  • Chocolate chips: Any type will work; dark chocolate chips were used here, but use your favorite.
  • Ice cream: The recipe uses a chocolate scoop for the body and pistachio for the witch face. If you want a green face, choose a pistachio or mint ice cream that is actually green; lime sherbet or mint chocolate chip are other good options. Feel free to use your favorite flavors.
  • Assorted candies and nuts: Use whatever you have to create faces — mini M&Ms, chocolate chips, nuts, licorice, candy eyes, raisins, etc. In these photos pistachio halves were used for noses, thin black licorice for eyebrows and hair, mini M&Ms for mouths, and candy googly eyes for a playful look.

How to make the witch hats

1. Melt chocolate in short bursts in the microwave, stirring between each interval until smooth. Allow the chocolate to cool until it’s comfortable to touch — it shouldn’t be hot before you handle cones or Pizzelles.

Painting Ice Cream Cone with Chocolate

2. Use a pastry brush or the back of a spoon to paint a thin layer of melted chocolate over the outside of an ice cream cone, leaving the very tip uncoated so you can hold it. Paint the underside edge of the cone as well if you like.

3. Place the cone in the center of a Pizzelle cookie, using the unpainted tip as a handle. Paint a generous amount of chocolate along the top and outside edge of the Pizzelle and into the seam between cone and cookie to seal the hat well. Be sure to cover the cone tip you want painted too.

4. Let the chocolate set. You can leave the hats at room temperature (about 90 minutes depending on thickness of chocolate) or speed the process in the fridge (about 30 minutes).

Assemble the sundaes

5. When hats are fully set, build each sundae: add a scoop of chocolate ice cream to a sundae glass or narrow mug, then a scoop of pistachio (or other green) ice cream on top.

6. Decorate the top scoop to create a witch face using your chosen candies and nuts. Finish by placing a chocolate-dipped Pizzelle-and-cone hat on top and serve immediately.

Tips and tricks

  • Make sure melted chocolate has cooled enough before painting cones; it shouldn’t burn your fingers.
  • Work on parchment paper to prevent sticking and minimize cleanup.
  • Set hats at room temperature (about 90 minutes) or in the fridge (about 30 minutes). If chilling, place the parchment on a small tray so you can move the hats in and out without disturbing the wet chocolate.
  • Store finished hats in a single layer in an airtight container or zip-top bag. Don’t pack them too tightly to avoid chipping the Pizzelles.

Recipe FAQs

Can I make the witch hats ahead of time?

Yes — the chocolate-dipped hats can be made several days in advance. Keep them fully set and stored in an airtight container at room temperature for up to about 4 days.

How do I store the chocolate witch hats?

Once completely set, place hats gently in a sealed plastic bag or container. Avoid packing too many together to prevent Pizzelle edges from chipping.

What if I don’t have candy eyes?

No problem. Use mini M&Ms, mini chocolate chips, nuts, raisins, or any small candies or snacks you have to make faces.

  • Yield: 2 sundaes
  • Category: Dessert
  • Method: No Bake
  • Cuisine: American

Ingredients

  • ½ cup chocolate chips
  • 2 sugar ice cream cones
  • 2 chocolate or plain Pizzelle cookies
  • Pistachio ice cream (or your favorite green-colored ice cream)
  • Chocolate ice cream
  • Assorted candies and/or nuts (candy eyes, licorice laces, mini M&Ms, pistachios, etc.)

Instructions

  1. Place chocolate in a small microwave-safe bowl. Microwave in 15-second increments, stirring between each, until melted. Allow the chocolate to cool until it’s safe to touch.
  2. Use a pastry brush to paint the outside of an ice cream cone with melted chocolate, leaving the very tip unpainted.
  3. Paint the edge of the cone and then place it in the center of a Pizzelle using the unpainted tip as a handle.
  4. Paint the top and outside edge of the Pizzelle, filling the seam generously with chocolate to seal the cone and cookie together. Paint the cone tip if desired.
  5. Repeat for the second cone and Pizzelle.
  6. Allow the chocolate hats to fully set — about 90 minutes at room temperature or 30 minutes in the fridge.
  7. To serve, add a scoop of chocolate ice cream to a sundae glass, top with a scoop of pistachio (or other choice) and decorate the top scoop with candies and nuts to create a face. Place a set witch hat on top and serve immediately.

Notes

Place wet chocolate hats on parchment paper to prevent sticking. If chilling the hats, put the parchment on a tray so you can transfer them to the fridge without disturbing the wet chocolate.

Hats can be stored in an airtight container at room temperature for up to about 4 days once completely set.
